Buying Mushrooms
Look for smooth, firm caps, free from major blemishes. Surface should be dry, but not dried, and never slick. Some peat moss on the mushrooms or in the package is acceptable. Freshly picked white mushrooms have closed veils (meaning the membrane on the underside of the cap is tightly attached to the stem and cap) and a delicate flavor. If the membrane has pulled away, it means the mushroom has lost some moisture, actually giving it a somewhat richer flavor. Many people prefer open veiled mushrooms for cooking. A 12-ounce package of Country Fresh Mushrooms contains between 25-30 mushrooms and makes about 4 cups when sliced. We call our product Country Fresh because it’s quick-chilled immediately after picking and kept refrigerated every step of the way from the farm to the store, for freshest possible quality.

Packaging
Mushrooms are offered in several package sizes, ranging from 8 to 24 ounces and in bulk (loose). You’ll also find them sliced. Specialties come in packages ranging from 3 to 6 ounces, or more, depending on the variety. All Specialties varieties are available in bulk packaging.

Storing
Refrigerate immediately at home. Fresh mushrooms should be used as soon as possible.If packaged, to prolong storage, remove outer plastic wrap and cover with a paper bag to reduce moisture buildup.
